easy tex-mex tacos

This budget friendly, Tex-Mex taco dinner is super easy and yummy! I serve my tacos with homemade guacamole and cheesy refried beans.


Taco Meat
2 lbs. Ground Beef or Turkey
2 packets of McCormick's Original Taco Seasoning

1 can Mild Rotel

1 Onion

1/2 can of Mild Enchilada Sauce

1 1/2 cup of water


Taco Fixin's:
Shredded Lettuce
Shredded Cheese (Colby/ Monterrey Jack)

Tomato

Sour Cream and Salsa (optional)


Brown meat and drain well. Dice a sweet, yellow onion and add to drained meat, cooking it for a bout 3 minutes. Add Rotel (with its juices), seasoning packets, enchilada sauce, and water. Combine well and let simmer for 20-30 minutes, stirring occasionally. When meat mixture has thickened, remove from heat and allow it to sit for 5 minutes. Serve in crispy or soft taco shells with your favorite fixin's.


Cheesy Refried Beans

1 can of Refried Beans
1/2 can of Enchilada Sauce

1 large handful of Cheese (Colby/ Monterrey Jack)


In a medium sauce pan over medium heat, combine all ingredients and heat through. Stir frequently in a figure eight pattern to melt the cheese. When cheese is melted, the beans are warm. (If the heat is too high, your beans will pop and splatter.)
Serve on the side or as "glue" in your tacos.

Homemade Guacamole
4 Ripe Haas Avocados
1 tsp. Mrs. Dash Seasoning Blend

Salt to taste

Peel, pit and mash avocados in a small mixing bowl. Add seasoning and salt to taste. Stir to incorporate. To prevent browning, sprinkle Fruit Fresh on top, or a squeeze lime juice. (Yes, it really is this easy!)

I'm an avocado advocate. I had avocado in my breakfast burro this morning and guacamole for lunch. In fact, it's not uncommon to follow that up with some avocado infested yummy for dinner, too. I just can't help myself. It's like they call to my soul.
