bbq chicken pizza with caramelized shallots

Featuring caramelized shallots and rosemary, this is not your traditional delivery dinner!
Also, you can cook it in less time than it takes to order in. :)

This pizza is hearty enough to be enjoyed as a casual and fun main course, or devoured as a tasty appetizer.

I think this is my new favorite, throw-down dinner!


Barbecue Chicken Pizza with Caramelized Shallots

1 can Pillsbury Pizza Dough
1 tbsp. Olive Oil
3/4 tsp. dried Rosemary, chopped
1/4 tsp. freshly ground Black Pepper, or to taste
1 tbsp. Butter
3 Shallots, thinly sliced
1/2 cup KC Masterpiece Barbecue Sauce
1/2 Rotisserie Chicken, deboned and shredded
4 pieces Cooked Bacon, crumbled (or 3 tbsp. Hormel Real Bacon Pieces)
2 cups Colby Jack Cheese, shredded
1 tsp. Chives, chopped

Preheat oven to 400˚.

Thinly slice shallots, and melt butter in a small skillet over medium-low heat. Add shallots to pan and caramelize for 10 minutes, stirring frequently.

Spray or grease 15x10-inch cookie sheet. Unroll dough on cookie sheet; starting at center, and press dough into rectangle. Brush olive oil on dough, and season with rosemary and pepper.
Bake 9-11 minutes, or until golden brown. Remove from the oven to add toppings.


Spread the barbecue sauce over crust, avoiding 1/2" around the edges. Sprinkle the cheese, shredded chicken, bacon, and shallots over the top.
Return the pizza to the oven and bake until the cheese melts, about 6-8 minutes.


Add chopped chives for a pop of color.
Slice and serve immediately.

Ooh, we love BBQ chicken pizza at this house! We normally just add the BBQ sauce, cheese, chicken, some red onion and dried rosemary and we're set. But this looks so yummy. This must have been what you needed those shallots for from Wally World, eh?! :)

Oh my goodness I just drooled all over my keyboard - how embarrassing! ;)

Rosemary is such a fantastic flavor and carmelized shallots...oh yum!

I just love how quickly this comes together! I randomly get pizza cravings so I'm writing this one down.

And no I haven't seen the chocolate covered bacon but someone else commented that they had seen it. I have tried a peanut butter and bacon sandwich before. That was pretty unique, haha!
