prosciutto wrapped asparagus

A flavorful and fresh, summer side dish.

Prosciutto Wrapped Asparagus

1 bunch of Asparagus
1/2 lb. Prosciutto, or 1/2 slice per 3 spears
Parmesan Cheese, freshly grated
Olive Oil
Salt and Pepper, to taste

Preheat oven to 450°.
Line a baking sheet with aluminum foil, and lightly coat with olive oil.

Trim off the woody ends of the spears, and blanch in boiling water for 5 minutes.
Transfer to an ice bath to retain the beautiful, green color. Pat dry with paper towels.

Drizzle about 1 tbsp. of olive oil on the asparagus, and season to taste with salt and pepper.
Wrap 1/2 slice of prosciutto around 3 asparagus spears (start at the bottom, and spiral up to the tip). Place the spears, seam side down, on the baking sheet.

Bake for 10-15 minutes, or until the asparagus is tender.
Top with fresh-grated Parmesan cheese, and serve warm.

Um, yummmmm. Too bad my husband wouldn't touch any of it (he's so picky) but it looks so yummy!!!

Mmmm. I love asparagus and have never tried wrapping it in anything! So I will have to try this one for sure.
