Greek Chicken with Tzatziki Sauce5 Boneless Skinless Chicken Breasts
Marinade:
1-2 cloves of Garlic, minced
1/2 cup Extra Virgin Olive Oil
2 tbsp. Honey
2 Lemons, juiced
1 tbsp. fresh Rosemary, chopped
1 tbsp. fresh Thyme, chopped
1 tbsp. fresh Oregano, chopped
Mix all marinade ingredients in a large, Ziplock freezer bag. Add chicken breasts to marinade, zip closed, and massage marinade into chicken. Marinate for at least 1 hour, but overnight is best.
Preheat an oiled grill to medium-high.
Grill chicken for 6 minutes per side (or until juices run clear), turning 45 degrees every 3 minutes for great grill marks.
Serve with Tzatziki Sauce and ripe tomatoes.
Tzatziki Sauce:
8 oz. Greek Yogurt (or strained/drained plain yogurt)
8 oz. Sour Cream
1 English Cucumber, peeled, seaded, and diced
1 Lemon, juiced
1 tbsp. Garlic, minced
1 tsp. dried Dill
2 tbsp. Extra Virgin Olive Oil
Salt and Pepper to taste
In a food processor, add all ingredients until well combined and smooth. Taste for salt and pepper.
For the best flavor, store in an air-tight, non-reactive container for at least 2 hours or overnight.
Serve the cool sauce over Greek Chicken with flat bread, tomatoes, onions, or your favorite pita chips.
