Roasted Parmesan Asparagus
2 bunches Asparagus, trimmed
2 tbs. Butter, melted
1 tbs. Olive Oil
1 tbs. Mrs. Dash Seasoning Blend
Salt and Pepper, to taste
Parmesan Cheese, freshly grated
Snap or trim the woody stems off of the asparagus. On a baking sheet, spread out asparagus in one layer. Drizzle with melted butter and olive oil. Season with Mrs. Dash, salt, and pepper.
Roast the asparagus under the broiler (on high for electric ovens), in the middle of the oven for 5-8 minutes, depending on size.* Keep a very close eye on it, as they can scorch quickly.
Remove from the oven when you smell the asparagus' nuttiness, and it looks tender. As soon as the sheet of asparagus comes out of the oven, embellish with freshly grated Parmesan cheese. The heat of the asparagus will melt the cheese.
This is a fantastic side to compliment fish and seafood, grilled meats, and pastas.
Around our house, it frequently never even makes it to a plate!
While chatting and sipping white wine, Mom and I stand around the oven eating these savory spindles!
** The cooking time is not an exact science since the asparagus stems vary in size. If you are not sure if it is done, sample one!
Too soft for your liking? Freeze 'em, and use them later in cream of asparagus soup! **

I make something like that without the Mrs. Dash. I squeeze a little lemon juice over them at the table. Yummy!

i don't cook but 2 or 3 times a wk.on a good wk.my health is just too fraile.but when i cook again,i am going to cook your aspargus here.

Ooooh, I just love asparagus, and have some in the fridge. Going to try this out when I get back from the inlaws for dinner. The MIL never cooks food I like anyways, so this will be a treat. Mmmm. Can't wait.
