tomato and cucumber salad

Refreshing, cool, and tangy marinated salad.


Tomato and Cucumber Salad


1 lb. Tomatoes (Grape or Cherry), halved
1 large English Cucumber, Seeded
1 Bell Pepper, any color
Flat Leaf Parsley, handful
2 cups Newman's Own Italian Salad Dressing
Parmesan Cheese, freshly grated
Salt and Pepper, to taste

Halve grape tomatoes. Seed, and dice cucumbers. Dice bell pepper, and finely chop parsley.
In a serving bowl, toss veggies and parsley together. Coat well with salad dressing, season with salt and pepper, and freshly grate Parmesan cheese all over the salad.
Allow salad to marinate in the refrigerator for 1 hour, stirring once.

Just found your blog, and I think my tummy will thank me for it. This salad is so light and yummy sounding, I think I'm going to have to make it for lunch tomorrow. Will it bring spring to me faster?

And our fur babies are also addicted to PB. My leg looks like a freaking scratching post every time I open the jar from the feverant demands of bossy little paws...

In fact, Bear once got a little more routound b/c Ben was feeding him PB in the middle of the night while I was asleep...
