Tilapia with Brown Butter Caper Sauce4 Tilapia Fillets
1/4 cup Flour
1/2 stick Butter, softened
4 tbsp. Olive Oil
1 1/2 tbsp. Capers, drained
1 Lemon, juiced
1 Lemon, sliced for garnish
Salt and Pepper to taste
Season fish generously with salt and pepper. In a shallow dish, lightly coat both sides of fish with flour. Shake off excess.
Place 1 tbsp. butter and 2 tbsp. olive oil in a frying pan over medium heat. Allow butter and oil to get hot, about 2-3 minutes. In 2 batches, cook 2 of fillets for 3 minutes per side, or until golden-brown. Set aside on a plate and cover with foil. To the hot pan, add 1 tbsp. butter and 2 tbsp olive oil. Cook the remaining fillets and set aside.
Immediately remove pan from heat. Add 2 tbsp. butter to the pan, the juice of one lemon, and capers. Pour sauce over fish and garnish with lemon slices.
Dill Smashed Potatoes
Using help from the store, turn simple potatoes into a gourmet side.
2 bags of Potato Microwave Steamers
2 tbsp. Butter
1 tbsp. Dill, dried
Salt and Pepper to taste
Sour Cream
Follow cooking instructions on bag of potatoes. In a medium, heat-safe dish, remove the potatoes from their bags (be careful, as they are hot!). Using a large spoon, smash the potatoes just until they burst. Season with freshly cracked pepper and salt. Toss with butter and dill. Serve with a cool dollop of sour cream.
